Pumpkin-Honey Beer Quick Bread

Ingredients

  • 3 1/4 c. flour
  • 2 tsp. salt
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1 tsp. pumpkin pie spice
  • 1/2 c. water
  • 1/3 c. ground flaxseed (optional)
  • 2 1/2 c. sugar
  • 2/3 c. oil
  • 2/3 c. honey beer (at room temperature)
  • 4 eggs
  • 1 (15 oz) can pumpkin

Preparation

Step 1

1.) Preheat oven to 350

2.) Combine flour, salt, and next 4 ingredients in a medium bowl. Stir.

3.) Combine 1/2 c. water and flaxseed.

4.) Place sugar and next 3 ingredients in a large bowl; beat with a mixer at medium-high speed until well-blended. Add flaxseed mixture and pumpkin; beat at low speed, just until blended. Add flour mixture; beat until combined.

5.) Divide batter between 2 (9x5 in) loaf pans coated w/ cooking spray.

6.) Bake at 350 for 1 hour and 10 minutes or until toothpick comes out clean. Cool 10 minutes in pan. Remove from pan. Cool completely.
