Fettucine Slaw

Ingredients

  • 8 oz uncooked fettucine
  • 3 cups finely chopped cabbage
  • 4 celery ribs, sliced
  • 2 cups thinly sliced cucumbers
  • 2 cups shredded carrots
  • 1 cup (8 oz) reduced fat plain yogurt
  • 1/2 cup reduced fat mayonnaise
  • 2 T white vinegar
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp ground mustard

Preparation

Step 1

1. Break fettucine into thirds and cook. Drain then rinse with cold water.

2. In large bowl, combine fettucine, cabbage, celery, cucumber, and carrots in a small bowl.

3. In a separate bowl combine remaining ingredients.

4. Pour over fettucine mixture and toss to coat.

Refridgerate until chilled
