Red Bell Pepper Dip

Ingredients

  • 2 T golden raisins
  • 2 T balsamic vinegar
  • 3 T part-skim ricotta cheese
  • 2 T chopped fresh parsley
  • 2 T chopped fresh basil
  • 2 T 1/3 less fat cream cheese
  • 3/4 tsp honey
  • 1/8 tsp salt
  • 1 (5.5 oz) bottle roasted red peppers, rinsed and drained

Preparation

Step 1

1. Combine raisin and 2 T balsamic vinegar in a microwave safe bowl. Microwave at high 45 sec. Let stand 10 minutes and then drain.

2. Place raisin, ricotta, and rest of ingredients in food processor. Pulse until well combined.
