Ingredients
- 3 lbs carrots, cut 1/2 inch on bias
- 3 tbs olive oil
- Salt and pepper
- 1/3 cup crumbled feta cheese
- 2 tbsp chopped flat parsley
Preparation
Step 1
Preheat oven to 425. Toss carrots with oil on rimmed baking sheet. Season with salt and pepper. Roast until caramelized and tender, 25 minutes. Transfer to a bowl, toss with feta and parsley.
