Steam-Sauteed Green Beans

Ingredients

  • 1 1/2 pounds green beans
  • 1/2 tsp kosher salt
  • 1/3 cup water
  • 2 tsp olive oil
  • 1 tsp minced garlic

Preparation

Step 1

In a large nonstick skillet set over high heat, combine the vegetables, salt, and water. Cover and steam the vegetables, reaaranging them occasionally, until they are crisp-tender and the water has evaporated, 5 to 8 minutes. Push the vegetables to one side of the pan. Pour the oil into the empty side, sprinkle the garlic into the fat and let frizzle for a few seconds. Push the vegetables back into the fat and toss them well to coat. Continue tossing the vegetables until any water that is left on them has completely evaporated and they are glossed with a thin slick of fat; if they seem too dry, add a tablespoon or two of water to bind with the fat and coat the vegetables. Season with pepper, add salt if necessary, and serve at once.
