Ingredients
- 3 lbs of pork kabob or shoulder
- 2 delicata squash
- 2 cans of pumpkin
- 1 big can of diced tomatos
- 2 chipotle or poblano peppers
- 2 red peppers
- 3 onions
- 4 garlic cloves
- 1 can of black beans and pinto beans
- chili power
- cumin
- 2 cups of chicken stock
- chipotle hot sauce
Preparation
Step 1
In dutch oven brown pork and set aside. Saute onions, garlic, squash, peppers for a few mins and add stock and tomoatoes and pork. Add spices. Put in oven on 250 degrees for at least 3 hours or until pork is shreddable. Shred pork and add beans and chipotle hot sauce to taste. Simmer for 10 mins and serve.
