Beef Lasagne

Really healthy and delicious lasagne, particularly good with cottage cheese on the side.

Ingredients
- 400 g / 14 oz extra lean minced beef
- 1 red pepper, deseeded and chopped
- 1 courgette, chopped
- 1 onion, peeled and chopped
- 4 garlic cloves, minced
- 400 g can chopped tomatoes with herbs
- 400 g / 14 oz passata with herbs and garlic
- 2 tsp dried mixed herbs
- 511 g / 1 lb 2 oz nonfat plain yogurt
- 2 eggs, lightly beaten
- Pince of nutmeg
- 12 dried lasagne noodles
Preparation
Step 1
Place a frying pan over a high heat. Add beef, pepper, courgette, onion and garlic and stir-fry for 6-8 minutes. Add tomatoes, passata and dried herbs. Cook 12-15 additional minutes, stirring often.
Meanwhile, mix yogurt, eggs and nutmeg until smooth. Season well.
Preheat oven to 200 degrees C. Spray a medium lasagne dish with cooking spray. Spoon half the mince mixture into dish, top with noodles and yogurt. Repeat, finishing with yogurt. Bake in the oven for 25-30 minutes or until top is golden. Remove from the oven and serve immediately with a mixed salad or side vegetable.
