Hot Potato Salad

Ingredients

  • 6 medium sized potatoes
  • 1/4 c finely chopped celery
  • 1/4 c finely chopped parsley
  • 2 T tarragon vinegar
  • 1 slice lemon
  • 4 T olive oil
  • salt & pepper to taste

Preparation

Step 1

Cook potatoes, cool and slice thinly into baking dish. Season and sprinkle with celery and parsley. Mix olive oil and vinegar, add lemon and heat to boiling point. Pour over potatoes, cover and let stand in moderate oven until thoroughly warmed.
