Ingredients
- 2 lbs Italian Sausage Casings removed
- 1 cup chopped onion
- 3/4 cup chopped green pepper
- 3 garlic cloves, minced
- 1 can 28oz diced tomatoes, undrained
- 1 can 15oz Italian seasoned tomato sauce
- 1/2 lb fresh mushrooms sliced
- 1 cup water
- 1/2 cup beef broth
- 1/2 cup red wine or additional beef broth
- 1-1/2 cups uncooked spiral pasta
- 1/2 cup shredded mozzarella cheese
Preparation
Step 1
Crumble sausage into a large nonstick saucepan coated with cooking spray. Add the onion, green pepper and garlic. Cook over medium heat until meat is no longer pink; drain.
Add the tomatoes, tomato sauce, mushrooms, water, broth and wine. Bring to a boil. Reduce heat; cover and simmer for 1 hour.
Meanwhile, cook pasta according to package directions; drain. Stir into stew; heat through. Top each serving with 1 tbsp mozzarella cheese.
