- I head garlic clove, peeled
- 1/2 c olive oil
Preparation
Step 1
Bring peeled garlic cloves and olive oil to a gentle simmer over med-low heat. Simmer until garlic is lightly browned and completely tender, 20-25 mins. Let cool in oil. Keep refrigerated for up to one week.
How to use: Mash creamy cloves on toast for quick appetizer. Add mashed cloves to mashed potatoes. Purée garlic with its cooking oil and a few anchovies to make a dip called bagna cauda.
