Sausage and Lentil Soup with Pumpkin

Ingredients

  • 2 T olive oil
  • 4 celery stalks, rough chop
  • 3 lg garlic cloves, minced
  • 1 roast pie pumpkin, pureed
  • 5 links sweet italian sausage, skins removed
  • 3 qt beef stock
  • 1 qt chicken stock
  • 2 C red lentils
  • 1 C barley
  • 1 C brown rice
  • 2 bay leaves
  • 2 T Rosemary
  • 1 T basil
  • 1 T oregano
  • 1.5 " piece ginger, rough chopped
  • salt and pepper to taste

Preparation

Step 1

sweat garlic and celery in olive oil for about a minute. add sausages and brown. add bay leaves, stock, pumpkin puree, lentils, barley and rice. bring to a boil and cook for 20-30 minutes, until the barley and rice are fully cooked. add remaining herbs and ginger. cook for another 10 minutes. adjust the seasoning and serve.
