    celery stalks, rough chop

    lg garlic cloves, minced

    roast pie pumpkin, pureed

    links sweet italian sausage, skins removed

    qt beef stock

  • 1

    qt chicken stock

  • 2

    C red lentils

  • 1

    C barley

  • 1

    C brown rice

    bay leaves

    T Rosemary

    T oregano

    " piece ginger, rough chopped

  • salt and pepper to taste

Directions

sweat garlic and celery in olive oil for about a minute. add sausages and brown. add bay leaves, stock, pumpkin puree, lentils, barley and rice. bring to a boil and cook for 20-30 minutes, until the barley and rice are fully cooked. add remaining herbs and ginger. cook for another 10 minutes. adjust the seasoning and serve.
