Ingredients
- 1 lb macaroni
- 2 T butter
- 2 T flour
- 1 1/4 C milk, heated
- dash salt
- 1/8 t white pepper
- 1/8 t ground mustard
- 2 C shredded cheddar cheese
- dash cayenne pepper
- 1/2 C buttered bread crumbs
Preparation
Step 1
Cook the macaroni until al dente.
Melt the butter in a 2-quart saucepan, stir in the flour and cook, stirring constantly, until the paste cooks and bubbles a bit, but don't let it brown, about 2 minutes. Add the hot milk a little at a time, stirring as the sauce thickens. Bring it to a gentle boil. Add the seasonings, lower the heat, and stir for 2 to 3 minutes more. Add the cheese and cayenne, and remove from heat.
Place the cooked macaroni into a buttered casserole dish, pour in the cheese sauce, and stir gently to distribute. Top with buttered bread crumbs (1/2 C bread crumbs and 2 T melted butter) and bake at 375 for 30 minutes.
