Cheese Tortellini with Tomatoes and Corn

Ingredients

  • 1 pkg (18 oz) refrigerated cheese tortellini
  • 1 pkg (12 oz) frozen corn, thawed
  • 2 cups cherry tomatoes, quartered
  • 1/4 c. green onions, thinly sliced
  • 1/4 c. minced fresh basil
  • 2 T. grated Parmesan cheese
  • olive oil
  • balsamic vinegar
  • 1/4 tsp garlic powder
  • 1/8 tsp. pepper

Preparation

Step 1

Cook tortellini and corn according to package directions; rinse and drain in cold water.

Combine all ingredients in a large bowl and toss to coat.
