Raspberry Scones

Ingredients

  • Scones:
  • 3 cups flour
  • 4 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 6 Tbs. sugar
  • 10 Tbs. butter
  • 1 cup cream
  • 2 eggs
  • 1/2 pint raspberries
  • Topping:
  • 1 egg white
  • 2 Tbs. sugar

Preparation

Step 1

Scones:
Line 2 cookie sheets with parchment paper
Pre-heat over to 400
blend first 4 ingredients in food processor
process butter into mix
whisk cream and eggs
process into mix
knead dough and divide in half
form each 1/2 into a round
divide raspberries evenly between halves
pull outside edges out and over center
pat into a round again
cut into 6 wedges

Topping:
whisk whites to froth
brush over cut rounds
sprinkle with sugar

Bake 17-18 min. to light brown
Cool 5 min.
