Ingredients
- 4 pkges. butternut squash, peeled and cubed
- 5 granny smith apples, peeled and cut
- 2 sticks butter
- 3 large onions, chopped
- 8 cloves of garlic
- 1 large can low sodium chicken broth
- 2 large cans water or make sure squash is covered with liquid (add more if needed)
- Salt and pepper to taste
Preparation
Step 1
In large saucepan melt butter and saute onion until soft. Add garlic and saute (don't brown)
Add butternut squash, apples, broth amd water. Let boil - simmer
Cook until all ingredients are soft like
mashed potatoes. Let cool
Puree in blender
