Butternut Squash Soup

Ingredients

  • 4 pkges. butternut squash, peeled and cubed
  • 5 granny smith apples, peeled and cut
  • 2 sticks butter
  • 3 large onions, chopped
  • 8 cloves of garlic
  • 1 large can low sodium chicken broth
  • 2 large cans water or make sure squash is covered with liquid (add more if needed)
  • Salt and pepper to taste

Preparation

Step 1

In large saucepan melt butter and saute onion until soft. Add garlic and saute (don't brown)
Add butternut squash, apples, broth amd water. Let boil - simmer
Cook until all ingredients are soft like
mashed potatoes. Let cool
Puree in blender
