Ingredients
- 2 cups diced peeled mango
- 2 tablespoons fresh lime juice
- 2 teaspoons minced crystallized ginger
- 1 1/2 cups water
- 3/4 cup sugar
- Mint sprigs (optional)
Preparation
Step 1
Place first 3 ingredients in a blender or food processor. Process until smooth, and set aside. Combine water and sugar in a small saucepan. Bring to a boil; cook 1 minute, stirring constantly. Remove from heat, and stir in mango mixture. Cool to room temperature.
Pour mixture into the freezer can of an ice-cream freezer, and freeze according to manufacturer's instructions. Garnish with mint sprigs, if desired.
