Spiced Mushroom and Chicken Pilaf

Ingredients

  • 3 Tbsp rapeseed
  • 1 . " Cumin Seeds
  • 1 Large Piece Cinnamon Stick
  • 6 Black Peppercorns
  • 3 Cloves
  • 1 Large Onion, roughly chopped
  • 2 bay leaves
  • 1 Bunch Thyme
  • 200 g Mushrooms
  • 3 Cloves of Garlic, finely chopped
  • Salt & Pepper to taste
  • 300 g Basmati Rice, Well wash and soaked.
  • 600 ml Vegetables Stock, Water or Chicken Stock.
  • (Double the volume of the rice)
  • Butter to Taste
  • 2 tsp Chopped Tarragon

Preparation

Step 1

Heat the oil in a casserole dish that fits in the oven.
Add the spices and cook for about 20 Sec before adding the onion and the bay leave and thyme.

Fry for 4-5 minutes, until the onions are soft. Add the mushrooms, Garlic and salt
