Spiced Mushroom and Chicken Pilaf

Ingredients
- 3 Tbsp rapeseed
- 1 . " Cumin Seeds
- 1 Large Piece Cinnamon Stick
- 6 Black Peppercorns
- 3 Cloves
- 1 Large Onion, roughly chopped
- 2 bay leaves
- 1 Bunch Thyme
- 200 g Mushrooms
- 3 Cloves of Garlic, finely chopped
- Salt & Pepper to taste
- 300 g Basmati Rice, Well wash and soaked.
- 600 ml Vegetables Stock, Water or Chicken Stock.
- (Double the volume of the rice)
- Butter to Taste
- 2 tsp Chopped Tarragon

Preparation
Step 1
Heat the oil in a casserole dish that fits in the oven.
Add the spices and cook for about 20 Sec before adding the onion and the bay leave and thyme.
Fry for 4-5 minutes, until the onions are soft. Add the mushrooms, Garlic and salt
