Ingredients
- 1 whole beef tenderloin (trimmed & tied) about 4 lbs
- 2 tbsp vegetable oil
- Salt
- Pepper
Preparation
Step 1
Preheat the oven to 425 degrees.
Sprinkle the filet of beef with salt and pepper.
Place the meat on a rack in a heavy roasting pan and brush or rub with oil.
Roast for approx 45 miutes for medium rare or until desired doneness (see below).
In the middle of roasting, invert the meat and baste once with the pan juices. When finished roasting, transfer to a carving board, cover with aluminum foil and let stand for 10 minutes before carving.
Carve into approx 1 inch thick filets and serve immediatley.
2-3 lbs
Medium Rare: 135 degrees
35-40 minutes
Medium: 150 degrees
45-50 minutes
4-5 lbs
Medium Rare: 135 degrees
50-60 minutes
Medium: 150 degrees
60-70 minutes
