Ingredients
- 2 pounds trimmed beef tenderloin
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- 1 (8 ounce) package cream cheese, softened
- 1/2 cup sour cream
- 3 teaspoons horseradish
- 48 toasted french bread rounds
- Madeira Mushrooms (recipe follows)
- Garnish: Fresh Parsley
Preparation
Step 1
1. Preheat oven to 400 degrees. Line a rimmed baking sheet with aluminum foil.
2. Rub tenderloin with oil, and sprinkle evenly with salt and pepper. Place on prepared baking sheets, and bake for 30-35 minutes, or until an instant-read thermometer registers 135 degrees. Cover, and let stand for 10 minutes. Cut into very thin slices.
3. In a small bowl, beat cream cheese, sour cream, and horseradish at medium-low speed with an electric mixer until smooth.
4. Spread cream cheese mixture evenly over bread rounds. Top each evenly with Madeira Mushrooms. Arrange 1 slice beef tenderloin over mushrooms. Garnish with fresh parsley, if desired.
