Step 1
Take 1 pound cubbed chicken breast. Cook 2 garlic cloves in olive oil for short time. Then add chicken and sauté 3-5 minutes until brown on all sides. Then add ½ c fresh lime juice and ½ c rum. Mix and then add 1 tsp lime zest, salt, pepper and bring to simmer, simmer for about 12-15 minutes. I added the rice, I just made it in the boil in the bag. I tried this 1/2009 and it was very good. The sauce cooks way down. 1 pound of chicken cooks down quite a bit. Kyle liked the chicken buy Ryan did not seem to.
