Tomato soup- Everyday Italian

I don't think of this as a tomato soup- more like minestrone base

Ingredients

  • 3 Tbsp olive oil
  • 2 carrots, peeled/chopped
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 jar marinara sauce
  • 28 oz. chicken broth
  • 1 15 oz can cannellini beans (drained and rinsed)
  • 1/2 tsp red pepper flakes
  • 1/2 cup pastina pasta (or small pasta)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • *reduce red pepper flakes for Karly

Preparation

Step 1

Warm olive oil in large soup pot over medium-high heat. Add carrots, onion and garlic and saute for 2 minutes. Add everything else and simmer for 20 minutes.
