Raspberry Curd

Ingredients

  • 6 oz raspberries
  • 1 1/4 cups sugar
  • 4 egg yolks
  • 1 stick butter
  • 1/4 cup lemon juice
  • pinch salt

Preparation

Step 1

Whisk all ingredients together in a heatproof bowl set over a pan of simmering water until thickened, 8-10 minutes. Strain, refrigerate until cold and thick.
