Berry Compote

I was trying to think of something a bit different to use in place of strawberries in strawberry shortcake. So here's what I came up with... I don't like raspberries or blueberries so I don't know how it tastes but according to everyone whos tried it, "They LOVED it!" Hope you enjoy it too.

Ingredients

  • 1 12 oz package of Raspberries
  • 1 12 oz package of Blackberries
  • 1 11 oz package of Blueberries
  • 1 16 oz package of Strawberries
  • 1/2 or 5 ozs of a bottle of Martinelli's Blood Orange Juice
  • (I have only seen this one time at my local market so maybe its new. I'm sure any acidic juice will work just fine)
  • 1/2 C (Approx according to taste) of sugar

Preparation

Step 1

Slice your strawberries into a medium to large bowl. I use a strawberry slicer but doing it my had is just peachy.

I also kinda smash my raspberries and blackberries using the strawberry slicer. You can also just squish them by hand or cut them in half with a knife.

I also recommend cutting the blueberries in half so that they aren't such a big bite in your mouth.

After all your slicing and smashing add the sugar and blood orange juice and mix well. Allow it to cool in the fridge for at least an hour. That is if your family will let you. Serve over yogurt, pound cake, cheesecake, or whatever sounds good to you! Enjoy!!
