Spinach Saute

Ingredients

  • 1/4 c pine nuts, toasted
  • 4 scallions, sliced
  • 1/4 c golden raisins
  • 1 10 oz package spinach
  • 1 T fresh lemon juice

Preparation

Step 1

In a large skillet, over medium heat, cook pine nutes until toasted. Add scallions and raisins and cook for about 30 seconds, stirring constantly. Add the spinach and 1/4 teaspook of salt and pepper and cook, tossing, until just wilted, 1-2 min; stir in the lemon juice. serve.
