Zucchini Fries

Ingredients

  • 1/2 of a zucchini (sliced into sticks like "fries")
  • 1 tsp almond flour
  • 1 tsp unflavored protein powder
  • 1/8 tsp salt
  • 1/8 tsp garlic powder
  • a shake of pepper
  • 1/4 cup panko bread crumbs
  • 2 TBS Kraft parmesan cheese
  • 1 tsp parsley
  • 1 egg
  • 1 TBS water

Preparation

Step 1

1.) Preheat oven to 425 degrees Fahrenheit

2.) In a small bowl, combine almond flour, protein powder, salt, garlic, and pepper.

3.) Put zucchini fries into a ziplock bag and add flour mixture to it. Seal bag and get your shake on until all the zucchini is coated. Set aside.

4.) In a shallow bowl, beat egg with water. Set aside.

5.) In a shallow bowl, mix together panko, parmesan cheese, and parsley.

7.) Dip zucchini fries in egg mixture and dredge in panko mixture. Shake off excess and place on wire rack. Repeat until every "fry" is breaded.

8.) Spray tops of zucchini fries with olive oil or nonstick spray (I personally love olive oil), and bake at 425 degrees for 15 minutes or until crispy golden brown.

9.) Eat immediately!
