Lemon Chess Pie

Ingredients

  • 1 1/2 Cups Sugar
  • 2 Tbs. Yellow Cornmeal
  • 1/4 tsp. Salt
  • 1/3 Cup Butter or Margarine, melted
  • 1/4 Cup Evaporated Milk
  • 3 Tbs. Lemon Juice
  • 4 Large Eggs
  • 1 Pkg. Pillsbury Pie Crusts (1/2 pkg.)

Preparation

Step 1

Combine first 3 ingredients in a medium bowl, stirring well. Add butter, milk, and lemon juice, stir well. Add eggs, 1 at a time, beating well after each addition. Fit pie crust into a 9" pie pan, flute edges. Pour filling mixture into pie crust. Bake at 350 degrees for 45 minutes or until pie is just set. Let cool on a wire rack.
