Horseradish Crusted Steak & Citrus Vinaigrette

Ingredients

  • 2 T finely chopped shallots
  • Peel of one orange
  • 1/3 C orange juice
  • 3 T rice wine vinegar
  • 2 t honey
  • 2 t olive oil
  • 1 lb. flank steak
  • Salt & pepper
  • 2 T prepared horseradish
  • 8 oz. mixed greens
  • 2 oranges, sectioned
  • 1/2 med. red onion, thinly sliced

Preparation

Step 1


Whisk shallots, orange peel & juice, vinegar & honey in small bowl. Add oil & whisk until well blended. Season with salt & pepper.

Preheat grill. Season flank steak with salt & pepper. Grill 10 min. Remove from grill. Spread horseradish on top and grill additional minute. Let stand 10 minutes before slicing thinly across grain.

In large bowl, toss greens with 3 T of dressing. Arrange on platter. Arrange orange sections, onion & sliced steak on top. Drizzle with remaining dressing.
