Hot German Potato Salad

Ingredients

  • 6 medium potatoes
  • 6 slices bacon, diced
  • 1 medium onion, minced
  • 5-6 frankfurters, skinned and sliced thinly sliced
  • 1/3 cup vinegar
  • 2 hard-cookes eggs, diced
  • 1 1/2 to 2 teaspoons salt

Preparation

Step 1

Boil unpeeled potatoes until tender. Fry bacon until crisp. Remove bacon from skillet and fry onion and frankfurters in bacon fat. Peel ( or leave skin on) and cut potatoes into 1/2 inch dice. Add potatoes, bacon, vinegar, eggs,salt to onions and frankfurters in the skillet, mix well
. Stir gently until thoroughly heated through.
