Peach, Tomato, and Basil Salad

Ingredients

  • 1 tbsp. white balsamic vinegar
  • 2 tbsps. extra virgin olive oil
  • 1 lb. peaches(about 3), pitted, each cut into 8 wedges
  • 1 lb. tomatoes(about 3 medium), cored, sliced horizontally 1/4 inch thick
  • 1/2 cup lightly packed fresh basil leaves, torn or roughly chopped
  • salt and pepper

Preparation

Step 1

In a small bowl, whisk together vinegar and olive oil. Arrange peach wedges and tomato slices on a platter, drizzle dressing on top. Scatter with basil. Season with salt and pepper. Serve immediately. Serves 6.
