Ingredients
- 8 oz green beans trimmed
- 8 oz orzo
- 2/3 cup packed dill
- 1/4 cup olive oil
- 2 tablespoons rice vinegar
- 1-tablespoon lemon juice
- 2 cups cucumbers peeled and diced
- 3/4 cup diced fennel bulb
Preparation
Step 1
blanch green beans in boiling salted water until just tender
cook orzo till tender and drain
blend oil vinegar and lemon juice and season with salt and pepper
cut beans and add to orzo with fennel, dill and cucumber
pour dressing and combine
if possible add dressing to everything while orzo is still warm so orzo can absorb dressing and not clump
