Lemon Pudding Cake

Ingredients

  • 4 tbsp. unsalted butter, plus extra for the dish
  • 1 c. granulated sugar
  • 3 large eggs, separated
  • 1/3 c. all-purpose flour
  • 3/4 whole milk
  • 1/3 c. lemon juice

Preparation

Step 1

Heat oven to 400 degrees F and butter an 8 by 8 2-quart baking dish.
Using an electric mixer, beat the butter, sugar, and egg yolks in a large bowl until light and fluffy, about 3 minutes. Add the flour and mix to combine. Reduce the mixer speed to low and mix in the milk and lemon juice.
Transfer the mixture to the prepared baking dish and place the dish in a roasting pan. Add enough boiling water to the roasting pan to come a third of the way up the baking dish and bake until lightly golden brown, 35 to 40 minutes.
