Mock Zucchini Crab Cakes

Ingredients
- 2 cups packed coarsely grated zucchini, unpeeled
- 1 small onion, finely chopped
- 1 cup Italian breadcrumbs
- 1 tablespoon mayonnaise
- 2-3 teaspoons old Bay seasoning
- 1 large egg, beaten lightly
- Salt and pepper to taste
Preparation
Step 1
Drain zucchini and onion in a colander a bit to let some of the liquid drain out. Combine all ingredients. The texture can be adjusted – if it is too wet, add more breadcrumbs. Heat oil in skillet. Form mixture into patties and sauté over medium-high until golden, about two minutes per side
