Lighten Up Lemon Squares

Ingredients

  • 1/4 cup unsalted butter softened
  • 2 tablespoon sugar
  • 3/4 cup flour
  • 1/4 cup sweetened coconut
  • pinch of salt
  • CURD
  • 2 whole eggs
  • 2 egg whites
  • 3/4 cup sugar
  • 1/2 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup flour
  • powdered sugar to garnish

Preparation

Step 1

preheat oven to 350*
coat an 8X8 pan with non stick cooking spray
cut two peace of parchment long enough to hang over the sides of the baking dish
this will be used as handles later to remove the bars
spray the parchment paper inside the pan with baking spray
for the crust in the bowl of a standing mixer whip butter and sugar until combined
add coconut, flour and salt and mix until it forms a dough
press dough into pan with floured hands bake until light golden about 15 minute remove and let cool
for the lemon curd in a large bowl whisk together all ingredient
pour over prepared crust and bake for 15 minute
remove from oven an allow to cool before slicing
