Caramelized Onion, Prosciutto & Blue Cheese Toasts

Ingredients

  • Olive oil
  • 2 cups thinly sliced red onions
  • 1/4 cup dry white wine
  • 1 tablespoon chopped fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup chopped toasted walnuts
  • 4 ounces prosciutto, chopped
  • Almond Date Raincoast crisps (Whl Fds chz dept)
  • 4 ounces blue cheese, crumbled
  • 3 cups arugula, chopped

Preparation

Step 1

In a large, heavy skillet, melt the oil over medium-high heat. Add the onions and saute until caramelized, 12 to 15 minutes, stirring occasionally. Add the wine and cook until dry, 2 minutes. Add the thyme, salt, and pepper, stir well, and remove from the heat. Add the walnuts and prosciutto and stir well to combine. Spread the onion mixture evenly across the toasts, top with blue cheese. Place under broiler until cheese is warmed. Top with arugula and drizzle of olive oil, if desired.
