Grilled Summer Squash Gremolata

Ingredients

  • 3 T finely chopped parsley
  • 2 t lemon juice
  • 1 1/2 t olive oil
  • 1/2 t salt
  • 1/4 t pepper
  • 1 clove minced garlic
  • 4 yellow squash, cut lengthwise into 1/4" slices
  • Cooking spray

Preparation

Step 1

Preheat grill to med-hi
Combine first 6 ingredients in large bowl
Coat squash slices with cooking spray. Place on grill rack coated with cooking spray; grill 1/1/2 min per side. Add squash to parsley mixture; toss gently to coat. Serve
