Ingredients
- 1 -½ cup Uncooked White Rice
- 3 cups Water
- 2 Tablespoons Olive Oil
- 1 -½ Tablespoon Lemon Juice
- 1 clove Garlic, Minced
- 1 -¼ teaspoon Kosher Salt
- ½ teaspoons Black Pepper
- 3 Tablespoons Butter
- ¾ cups Shredded Parmesan Cheese (no Cans, Please)
- 1 -½ Tablespoon Chopped Fresh Basil
Preparation
Step 1
Bring water to boil in a medium saucepan with a lid. Stir in rice, oil, lemon juice, garlic, salt and pepper. Cover and simmer on low heat for 20 minutes. Stir in butter until it melts, then Parmesan and basil. Makes a nice accompaniment, but hearty enough to have alone, too.
