Pineapple Chicken by Barbara

Ingredients

  • 4 chicken breasts, boned, baked or cooked
  • 1/2 cup crushed pineapple, packed in its own juice
  • 2 stalks celery, thinly sliced
  • 1/2 green bell pepper, thinly sliced
  • 2 tablespoons diet margarine
  • 1 dash pepper
  • 1 cup rice, cooked
  • 2 ounces mozzarella cheese, grated

Preparation

Step 1

Put cooked chicken in pan. Combine rest in bowl except cheese. Pour over chicken. Then top with cheese. 350 30 minutes.
