German Potato Salad

Ingredients

  • 1 1/2 pounds red potatoes, diced
  • 4 slices bacon, chopped
  • 1 bunch scallions, chopped
  • 1/4 c water
  • 2 Tbsp white wine vinegar
  • 2 tsp dijon mustard
  • 2 tsp sugar
  • 1/4 c chopped parsley
  • 1/4 c chopped sweet gherkins

Preparation

Step 1

1. Simmer red potatoes until tender, about 15", drain.
2. Cook bacon until crisp, drain. Reserve 2 Tbsp drippings.
3. Add scallions, saute.
4. Whisk in water, wine vinegar, mustard and sugar - bring to a simmer.
5. Toss in parsley and gherkins, potatoes and bacon, season with salt and pepper as desired.
