Creamy Cauliflower Potato Sala

Ingredients

  • 1 Lg head of cauliflower
  • 1 tbs cider vinegar
  • 1/3 cup light mayo
  • 1/3 cup low fat sour ceram
  • 2 Tbs pickle relish
  • 1 tbs yellow mustard
  • 4 Hard boiled eggs
  • 1/2 cup minced scallions

Preparation

Step 1

Trim and cut cauliflower head into bit size florets. Place florets in large microwave safe bowl with 2 Tbs water. Cover and microwave for 10-12 min, or until tender, stirring once. Rinse cooked lorets under cold water and drain well. Toss auliflower with cider vinegar.
In large bowl, combine mayo, sour cream, pickle relish, yellow mustard. Add florets, chopped hard boiled eggs and minced scallions. Toss to coat. Season salad to taste with salt and pepper. Chill 1 hour before serving.
