Ingredients
- 2 cup graham cracker crumbs
- 1/4 lb margarine
- 2 teaspoons cinnamon
- 8 ounces cream cheese
- 1 teaspoon vanilla
- 1/2 cup sugar
- 3 teaspoons lemon juice
- 9 ounces cool whip, defrosted
- blueberry, or strawberries
- 1 cup water
- 2 tablespoons cornstarch
- 1/2 cup sugar
- 1/4 cup berries, finely cut
Preparation
Step 1
Crust:
Use first 3 ingredients
Filling:
Cream together next 3 ingredients. Add lemon juice and blend. Add cool whip. Beat well. Freeze if desired
Topping:
Wash, drain and dry berries. Put on cake.
Glaze:
Combine water, cornstarch and 1/2 C sugar. Let simmer about 5 minutes. Let thicken until it clarifies. Let cool, not cold, an pour with spoon over cake and berries. If using strawberries, use 1 cup of sugar.
