Creamy Tomato zucchini noodle Soup - Paleo

Ingredients

  • 2 whole large Cloves Of Garlic Minced
  • 2 Tbl Olive Oil
  • 2 10 3/4 oz Cans of Condensed Tomato Soup (or make your own: http://nomnompaleo.com/post/2825821540/quick-cream-of-tomato-soup)
  • 1/4 cup Sun Dried Tomatoes, chopped or 2 Tbs Of Sun Dried Tomato Paste
  • 2 cups canned coconut milk; full-fat
  • 2 cups Chicken Stock
  • 1 tsp Onion Powder
  • 1 Tbs Italian Seasoning
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 3 large zucchinis spiralized into noodles
  • 1/2 cup Shredded Parmesan Cheese, for garnish

Preparation

Step 1

Combine garlic and olive oil in a large stock pot, and saute over medium heat until golden brown – be careful not to let the garlic burn.

Add tomato soup, tomatoes, half and half, chicken stock and spices to the pot.

Bring to a simmer.

Drop zucchini noodles in the soup, and cook for 3-5 minutes (just get noodles hot)
Ladle soup into bowls and garnish with parmesan cheese.
