Ingredients
- 2 cans black beans - (15 oz ea) rinsed, drained
- 1 package frozen whole kernel corn - (17 oz) thawed
- 2 large tomatoes seeded, diced
- 1 large avocado peeled, diced
- 1 small onion diced
- 1/8 cup chopped fresh cilantro leaves - (to 1/4)
- 2 tablespoons lime juice
- 1 tablespoon red wine vinegar
- Salt to taste
- Freshly-ground black pepper to taste
Preparation
Step 1
Mix all ingredients thoroughly in a large bowl. Cover and chill overnight. Taste and add salt, pepper, or more lime juice as necessary. Serve with tortilla chips as an appetizer, or with grilled chicken breast as a meal.
This recipe yields 12 servings.
