No Fuss Smashed Potatoes

Ingredients

  • 2 lb red potatoes unpeeled, cut into chunks
  • 5 cloves garlic peeled
  • 1/3 cup mayonnaise
  • 1/4 cup grated parmesan cheese
  • 1 tsp chopped fresh parsley

Preparation

Step 1

Add potatoes and garlic to large saucepan boiling water; cook 20 minutes or until tender. Drain; return to saucepan.

Mash potatoes and garlic with mayonnaise and parmesan cheese until light and fluffy
