Balsamic Tomato and Mozzarella Salad

This recipe came from The South Beach Diet Cookbook, and it is absolutely delicious! My favorite. I'd eat it every day of the week if I could.

Ingredients

  • 1 tablespoon balsamic vinegar
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon flaxseed oil
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 red bell peppers
  • 2 large tomatoes, sliced
  • 2 oz. fresh mozzarella, sliced
  • fresh basil leaves
  • sea salt

Preparation

Step 1

Cut bell pepper into large pieces, removing seeds. Place bell peppers, skin skide up, under the broiler for 10 minutes until blackened and blistered. Put peppers in a paper bag and seal for 10 minutes. Peel skin form peppers and discard. Cut into thin strips.

Arrange tomatoes, peppers, basil leaves and cheese. Drizzle with the dressing on top.

Let stand for 15 min.

Add salt, if desired.
