AVOCADO & JICAMA SALAD

  • 2 avocados
  • 1/2 cup thinly sliced jicama
  • 1/4 cup thinly sliced radishes
  • 3 tbsp. toasted pumpkin seeds
  • 1/4 light sour cream
  • 1/4 cup orange juice
  • 2 tbsp. fresh lime juice
  • 3 tbsp. sugar2 tbsp. olive oil
  • kosher salt
  • pepper
  • 1/4 cup dried cherries

Preparation

Step 1

1. cut avocados in half, toss pit, cut in crosshatch pattern, scoop out. Add jicama, radishes and pumpkin seeds.
2. In a serving bowl, whisk together sour cream, oj, lime juice, sugar and olive oil. Add vegetables and toss well. Adjust seasoning. Garnish with cherries.
