Spicy Roasted Cauliflower

Crushed red pepper gives the cauliflower a kick, while roasting mellows and sweetens each piece.

Ingredients

  • 1/3 cup extra virgin olive oil
  • 1 tsp. kosher salt or 3/4 tsp. salt
  • 1/4 to 1/2 tsp. crushed red pepper
  • 1 medium head cauliflower (about 2-3/4 to 3 lb.), cut into florets

Preparation

Step 1

.Preheat oven to 450 degrees F. In a large bowl combine olive oil, salt, and crushed red pepper. Add cauliflower florets and toss to coat. Place cauliflower in a shallow baking pan and roast 30 to 40 minutes, stirring once, until browned. Makes 6 to 8 appetizer servings
