Ingredients
- 6 c. mashed potatoes
- 1 c. cottage cheese
- 1/2 c. milk
- 1 medium onion, finely chopped
- 2 T. ranch salad dressing mix
- 1 lb. sliced bacon, cooked and crumbled
- 2 c. shredded Monterey Jack cheese
- 1 c. crushed Ritz crackers (about 25 crackers)
- 1/4 c. butter, melted
Preparation
Step 1
In a bowl, combine the potatoes, cottage cheese, milk, onion, and dressing mix. Spread in a greased 3-qt. baking dish. Top with bacon and cheese.
Combine cracker crumbs and butter; sprinkle over the top. Bake, uncovered, at 350 for 35-40 minutes or until bubbly.
