Maple Glazed Cornish Hens

Ingredients

  • 4 Cornish Game Hens
  • 1/4 Cup Apple Juice, frozen concentrate
  • 1/4 Cup Maple Syrup
  • 2 Tbs. Onion, finely chopped
  • 1 tsp. Prepared Mustard

Preparation

Step 1

Heat grill to medium. Cut each hen down backbone and spread flat on cutting board. Rinse hens and pat dry. Combine remaining ingredients in small saucepan. Bring to a boil, stirring occasionally. Cook for 5 minutes, stirring occasionally. Remove from heat, Pour half of glaze mixture into small bowl; reserve. Place hens directly over burners or coals on grill. Grill hens, covered, 20 minutes, turning once. Brush hens with remaining glaze. Turn and baste again. Grill, covered, 10-15 minutes longer. Brush with glaze, turn and baste again. Grill, covered, 10-15 minutes longer or until internal juices of chicken run clear. Drizzle with remaining glaze before serving. (Internal temperature of chicken should read 180 degrees.)
